There are those times when it is necessary to change the way you look at things. Change the lens and refocus even on something as simple as an apple. Step out of your comfort zone and you’ll be surprised at what you discover about yourself.

Recently I participated in an office secret Valentine’s Day exchange. It was positioned as a ‘Stalker Valentine’s Day’. Not something I would usually participate in, but somehow I took the chance to jump out of my comfort zone. I put a lot of thought into how to be someone other than who I am. I worried that I wouldn’t be cleaver enough, or find enough creative inspiration, or might fall short on my ability to surprise my secret Valentine. What I learned about myself is that I enjoyed planning out four days of mystery and intrigue. I learned that I wasn’t half bad. No one guessed it was me. In keeping with that lesson, I figured I could do something similar with my post. Take something simple and change how it is viewed by looking at it differently. A hint of the unexpected.

Apples are a great ingredient to blend into many recipes. Quite honestly a good apple on its own is a treat in itself. So the challenge was how to make a simple snack or quick breakfast out of something that is virtually perfect already.

By slicing an apple into thick rings, removing the seeds and dressing it up with some old time favorites, deliciousness was made. For toppings I chose almond butter, carob chips, flecks of chia seeds and for texture a scant sprinkle of cashew pieces and raw oatmeal.

There are no rules as to how much fun you can have with these raw apple ‘cookies’; dress them up with your favorite toppings and take a bite!

Raw Apple ‘Cookies’

Ingredients

1 large apple (red delicious recommended)

1-2 TBS nut butter (almond)

2 TBS vegan carob chips

dash of Chia seeds

1 tsp uncooked oats

1 tsp chopped salted nuts (cashews)

Directions

Slice apple into rounds and carefully remove seeds. To build the ‘cookie’ first cover the apple slice with nut butter and then sprinkle remaining toppings.
