This week’s episode of ‘I am not cooking!‘ is brought to you by my faithful blender.

I am a newly converted blending addict. There is no way around it. No matter how much I dream about a nice hot meal I keep on blending. Fortunately it is summer so it’s slightly less noticeable. >she tells herself in affirmation< My son took me aside and asked me, “Mom, do you think you will cook again soon?” Trust me it is not due to lack of want or hunger; I am in just temporarily caught in a proverbial typhoon. There is so much happening that I am doing that infamous balancing act that befalls many of us. And what better way to stay nutritious than to take advantage of the fruits and veggies of the season.

Between my Cuisinart and my blender I can whip up quite a meal. And I can continue to indulge my fascination with raw/vegan/dairy free/no refined sugar treats.

As long as you are not giving up on me, and you enjoy sharing in my latest food desires, then I shall continue to share these explorations. My young taste testers agree that this creation, albeit super simple, was blog worthy; so today I bestow upon you the Fudgiest Peanut Butter Smoothie – so good it’ll bring tears to your eyes!

This rich chocolate drink has hints of a peanut butter milk shake that I had years ago when visiting my friend Suzie in New Jersey. It is so thick you will want to dig in with a spoon. Have a napkin handy to wipe all of the luscious chocolate evidence off of your lips before having to share the second serving. The beauty of this recipe is unlike most smoothies or milk shakes when you save it in the refrigerator it doesn’t turn to liquid. In fact, it holds its shape beautifully. Leftovers never seemed so fresh! To add a bit of crunch toss some granola, quinoa puffs, rice krispies or chopped peanuts on top. Warning- if you use a straw, make sure it is not wimpy – this smoothie is dense!

Fudgiest Peanut Butter Smoothie

Ingredients

3 ripe bananas, peeled

1/2 -3/4 cup almond coconut milk, for thicker consistency use less milk

2 TBS natural peanut butter

2 TBS raw cacao powder

2 medjool dates, pits removed

Directions

Blend all ingredients together until smooth and creamy. Scrape down sides of blender at least once. Serve in a tall glass!
