There is some sort of strange energy that prevails once the end of the year hits. It’s as if we think we have to somehow squeeze everything into those remaining months. It feels like a continuous time crunch with no apparent end in sight. Yet, somehow I am happy to have this experience this year. I’ll take every last bit of it. I don’t want to miss a beat. Last year I could only wish to be going to parties and seeing family and friends, so I am reminded to manage the swells of activity that exist and to find the fun in the little moments.

I’ve put a concentrated effort into taking moments for myself. When I see something pretty or something I wish I could do, I just do it. It’s nothing major, it’s just a moment that I record in my mind or on my device. It’s a stopping point in an otherwise blurry busy day. These last few weeks I decided I that when I was driving to or from San Francisco, if the sky looked pretty, I was going to pull off of the freeway and stop at one of the gorgeous scenic vista points. And that is exactly what I did. It was spectacular ALL THREE TIMES!

I decided that the tourist shouldn’t have all of the best views and bragging rights. In the past I always thought, “No I shouldn’t stop”, because I didn’t have any tourists in my car or maybe I had to get somewhere and it would take too long …but really, that is the somewhere I needed to be.

This recipe was inspired by my desire to get cozy with a cuppa something yummy to sip as I curl up on the couch with a book. It is a snap to whip this up- and would be yummy with most any mild flavored milk of your choosing.

Warm Chai Coconut Kola Coffee Rum Mylk

Ingredients

1 cup coconut mylk (or any other mild flavored dairy or non-dairy milk)

½ tsp ground cinnamon

¼ tsp cardamom

¼ tsp nutmeg

¼ tps ginger

1 tsp honey (optional)

½ shot Koloa Coffee Rum (optional for the over 21 crowd)

Directions

In a small pot mix together all ingredients and stir with a whisk until well blended. Heat until hot and serve. If using Koloa Coffee Rum add in and stir to combine before serving. Makes 2 servings.
