With temperatures creeping towards the cooler end of the thermometer, I was in the mood for soup. Since I had not yet learned about Bertolli’s new soups >hint, give-away below recipe<, I whipped up a quick hearty bowl of Tomato Tortellini Soup from Better Homes and Gardens. The orangish-redish color was perfect for this October bowl of goodness and fit my busy schedule.

Cream cheese and tomato soup make a rich and creamy base for this four-ingredient tortellini soup recipe that can be prepared in just 15 minutes.

Tomato-Tortellini Soup

Ingredients

4 (14 oz) cans reduced-sodium chicken broth or vegetable broth

2 (9 oz) packages refrigerated tortellini

8 oz tub cream cheese spread with chive and onion

1 (10.75 oz) cans condensed tomato or tomato bisque soup

Snipped fresh chives (optional)

Directions

In a medium saucepan, bring broth to boiling. Add tortellini; reduce heat. Simmer, uncovered, for 5 minutes. In a bowl, whisk 1/3 cup of the hot broth into the cream cheese spread until smooth. Return all to saucepan along with tomato soup; heat through. Sprinkle with chives before serving. Makes 8 servings.

  1. why not? delicious, soupy goodness and the bread basket gives me an excuse to make some fresh bread!

  2. We’re big soup eaters at my house, at least once a week in the colder months! Though I totally cheat and make 4 HUGE batches of soup in the fall when all my veggies are super cheap and local; one beef barley, one cream of mushroom, one pot of turkey stew and a batch of chicken broth and veggies ready to become chicken and sliders. I spend abOut 20$ at the dollar store on containers big enough for a meal’s worth, and stock pile the freezer! Sometimes we eat soup twice in a week (especially if a cold is brewing) and home made biscuits or garlic bread is a MUST on the side! The Bertolli set would get lots of use at my house!

  3. Soup is on my weekly menu in the wintertime because it’s so easy and inexpensive to toss together. Also the tomato-tortelli soup looks so delicious.

  4. One of my Bunco friends makes this delicious soup EVERY year when it’s her turn to host our monthly gathering. This year my friend shared the recipe, and we couldn’t believe there were only four ingredients to this tasty soup. Like most of us, I work full-time, traveling 600-1,000 miles a week for my job. Four children, AND I take classes in the evening for graduate school, so soup frequently shows up on our dinner table year-round, and at least twice a week in the winter. We bake our own bread, which would look so much nicer in the lovely ceramic bread basket! I’m embarrassed to admit this, but my only (gulp) ladle is…..plastic, so the nice stainless one would definitely spruce up our soup dinners.   5. I love making chicken dumpling soup in the winter, but I could use some more variety. These Bertolli soups sound yummy!

  6. Soup and grilled cheese is one of our family’s favorite winter meals. It sounds like Bertolli can help us out in a couple areas. Not only do they now have soups to simplify dinnertime, but they also have these great items to help get dinner to the table – the ladle for the soup and the basket to serve up the grilled cheese!
