Remember waking up early, sneaking downstairs to make your mom a special Mother’s Day Breakfast in bed? The quality of the breakfast was usually commensurate with the age. My specialty was drop biscuits with jam. Still one of my favorites go to breakfasts even today.

I think I’ve officially entered my chocolate phase for 2015. I don’t know how or when it happened, but it hit me like a ton of bricks. I can’t stop thinking about eating chocolate. There are so many wonderful variations for making granola that you should never feel limited to stick to the exact ingredients list. Experiment and have fun with it. This delicious recipe came to into our family from our friend Barbora (AKA Bara). As a big advocate of healthy eating she was eager to share this recipe with us. Featured in this post are Bara and her two lovely assistants (blog regulars — Prima and Desi).
As we start to head into the shorter seasonal days, you’ll find that this is the perfect way to start your day and add a burst of sunny flavor to your palate.
Sunny Fruitified Granola
3/4 cup butter
1 cup honey
1 cup REAL maple syrup
4 cups oats, uncooked
1/2 cup coconut
1/2 cup pecans
1/2 cup walnuts
1/2 cup almonds, sliced or 1 cup almonds, whole
1/4 cup sesame seeds
1/4 cup flax seed
1/4 cup wheat germ
3/4 tsp cinnamon
1/2 tsp salt
1 1/2 cup mixed dried fruits (we used apricots and cranberries)
In a small pot over medium-low heat melt butter. Add in honey and syrup and stir until well combined.
Preheat oven to 350 degrees.
In a large pot combine remainder of the ingredients, EXCEPT THE DRIED FRUIT, mix until well blended. Stir melted butter mixture over oats, ensuring that all of the oats are well coated with the wet ingredients. Place granola into greased baking dishes and spread out mixture to allow for even cooking. Cook for 45 minutes, remove from oven and allow to cool for 10 minutes. Add in dried fruit and mix well. Once mixture is completely cooled place in air tight containers to help maintain its freshness.
Granola makes a wonderful breakfast when paired with fresh fruits and served with milk or over yoghourt.
